KEK LAYER PANDAN
Bahan-bahan ( 8 in )
- Cake:
- -250 gm sponge cake mix
- -4 biji telur
- -50 ml air
- -50 gm corn oil
- -1 teaspoon ovallate
- -2 tablespoon pandan juice - blh guna pandan emulco/paste
- Pandan fudge:
- -400ml coconut milk
- -300ml plain water
- -3 tsp agar2 powder
- -50 ml pandan juice
- 6 tbspn hoen kee bean flour ( green color)
- -180gm sugar
- Desiccated coconut (for topping)
Cara-cara
- SpongeCake:- Mix all ingredients into the mixer bowl and cream in high speed for 6-8 mins.
- -Pour mixture into an 8" pan and bake in preheated oven at 180C for 50mins.

When the cake is completely cool, slice the cake into 3 layers.
- Dissolve green bean flour into the pandan juice, make sure it is not lumpy.
- Add coconut milk, water,sugar and agar-agar powder into a pot. Heat with a low fire. Keep stirring while heating.
- When milk is just about to boil, pour in the green bean flour mixture. Stir well and keep whisking until mixture a bit thick. Off the stove.
- Allow this fudge to cool down slightly and thicken.

Spread some fudge onto the first layer of cake.

Top with the second layer of cake. Repeat until you have 3 layers of cake and two layers of fudge. Coat the whole cake with the remaining pandan fudge.

Sprinkle desiccated coconut on top and around sides of cake and chilled in the fridge before serving.
